การพัฒนาหนังสืออิเล็กทรอนิกส์ (e-book) เรื่องสารเคมีปนเปื้อนในอาหาร สำหรับนักเรียนระดับมัธยมศึกษาตอนต้น Development of the Electronic Book (e-book) on Food Contaminants for Middle School Students

Abstract

บทคัดย่อ การวิจัยครั้งนี้ มีวัตถุประสงค์ คือ 1) เพื่อสร้างหนังสืออิเล็กทรอนิกส์เรื่องสารเคมีปนเปื้อนในอาหารสำหรับนักเรียนระดับมัธยมศึกษาตอนต้นและประเมินคุณภาพโดยผู้เชี่ยวชาญ 2) เพื่อเปรียบเทียบผลสัมฤทธิ์ทางการเรียนของนักเรียนก่อนเรียนและหลังเรียนด้วยหนังสืออิเล็กทรอนิกส์ และ  3) เพื่อศึกษาความพึงพอใจของนักเรียนที่มีต่อการเรียนด้วยหนังสืออิเล็กทรอนิกส์ กลุ่มตัวอย่างที่ใช้ เป็นนักเรียนชั้นมัธยมศึกษาปีที่ 2 จำนวน 1 ห้องเรียน มีนักเรียน 27 คน เครื่องมือที่ใช้ในการวิจัย ได้แก่ 1) หนังสืออิเล็กทรอนิกส์เรื่องสารเคมีปนเปื้อนในอาหาร 2) แบบประเมินคุณภาพของหนังสืออิเล็กทรอนิกส์โดยผู้เชี่ยวชาญ 3) แบบทดสอบวัดผลสัมฤทธิ์ทางการเรียนเรื่องสารเคมีปนเปื้อนในอาหาร และ 4) แบบสอบถามความพึงพอใจของนักเรียนที่มีต่อหนังสืออิเล็กทรอนิกส์ใช้แบบแผนการวิจัยแบบกลุ่มทดลองกลุ่มเดียวและมีการทดสอบก่อนเรียนและหลังเรียน สถิติที่ใช้ในการวิเคราะห์ข้อมูลได้แก่ ค่าเฉลี่ย ส่วนเบี่ยงเบนมาตรฐานและการทดสอบค่าทีแบบตัวอย่างไม่อิสระต่อกัน และผลการวิจัย พบว่า 1) ผลการประเมินคุณภาพของหนังสืออิเล็กทรอนิกส์โดยผู้เชี่ยวชาญมีคุณภาพออยู่ในระดับมาก ( = 4.34, S.D. = 0.45)  2) ผลสัมฤทธิ์ทางการเรียนของนักเรียนที่เรียนด้วยหนังสืออิเล็กทรอนิกส์หลังเรียนสูงกว่าก่อนเรียนอย่างมีนัยสำคัญทางสถิติที่ระดับ .05 และ 3) ความพึงพอใจของนักเรียนที่มีต่อการเรียนด้วยหนังสืออิเล็กทรอนิกส์มีระดับความพึงพอใจอยู่ในระดับมาก ( = 4.27, S.D. = 0.73) คำสำคัญ: หนังสืออิเล็กทรอนิกส์  สารเคมีปนเปื้อนในอาหาร  ผลสัมฤทธิ์ทางการเรียน ABSTRACT The purposes of this research were: 1) to develop the electronic book on food contaminants for middle school students and to validate by experts, 2) to compare the learning achievement of students before and after learning with the electronic book, and 3) to study the students’ satisfaction toward learning with the electronic book. The samples group of this study was one classroom of 8th grade students (27 students). The research tools consisted of: 1) the electronic book on food contaminants, 2) the assessment form of the quality of the electronic book by the experts, 3) the achievement tests on food contaminants, and 4) the students’ satisfaction questionnaire toward the electronic book. The research design of the one group pretest-posttest design was used in this study. The data were analyzed by using means, standard deviation and t-test for dependent samples.  The results indicated that: 1) the quality assessment of the electronic book on food contaminants by the experts were at level of high quality ( = 4.34, S.D. = 0.45), 2) the means scores of learning achievement of posttest were higher than those of pretest at the statistically significant .05 level, and 3) The students’ statisfaction toward learning with the electronic book was at high level of satisfaction (  = 4.27, S.D. = 0.73).   Keywords: Electronic book, Food contaminants, Learning achievement
