การพัฒนาชุดกิจกรรมวิทยาศาสตร์เรื่องการตรวจสอบสารเคมีปนเปื้อนในอาหาร สำหรับนักเรียน ชั้นมัธยมศึกษาปีที่ 2, The Development of Science Activity Packages on Food Contaminant Testing for the 8th Grade Students

Abstract

          งานวิจัยนี้มีวัตถุประสงค์เพื่อ 1) สร้างชุดกิจกรรมวิทยาศาสตร์เรื่องการตรวจสอบสารเคมีปนเปื้อนในอาหาร สำหรับนักเรียนชั้นมัธยมศึกษาปีที่ 2 2) ประเมินคุณภาพของชุดกิจกรรมวิทยาศาสตร์เรื่องการตรวจสอบสารเคมีปนเปื้อน ในอาหารสำหรับนักเรียนชั้นมัธยมศึกษาปีที่ 2 โดยผู้เชี่ยวชาญ 3) ศึกษาประสิทธิภาพของชุดกิจกรรมวิทยาศาสตร์เรื่องการตรวจสอบสารเคมีปนเปื้อนในอาหารสำหรับนักเรียนชั้นมัธยมศึกษาปีที่ 2 และ 4) ศึกษาความพึงพอใจของนักเรียนที่มีต่อชุดกิจกรรมวิทยาศาสตร์เรื่องการตรวจสอบสารเคมีปนเปื้อนในอาหาร กลุ่มตัวอย่างที่ใช้ในการวิจัยเป็นนักเรียนชั้นมัธยมศึกษาปีที่ 2 โรงเรียนประโคนชัยพิทยาคม จังหวัดบุรีรัมย์ จำนวน 1 ห้องเรียน มีนักเรียนจำนวน 35 คนซึ่งเลือกมาโดยการสุ่มอย่างง่าย โดยชุดกิจกรรม มี 2 กิจกรรม คือ กิจกรรมที่ 1: สารเคมีปนเปื้อนตรวจได้อย่างไร และกิจกรรมที่ 2 : กินอย่างไร ให้ไกลสารเคมีปนเปื้อน ซึ่งกิจกรรมที่ 2 แบ่งเป็น 2 กิจกรรมย่อย คือ กิจกรรมที่ 2.1 สารเคมีปนเปื้อนในอาหารตรวจได้อย่างไร และกิจกรรมที่ 2.2 เลือกอย่างไรให้ปลอดภัย เครื่องมือที่ใช้ในการวิจัย ประกอบไปด้วย 1) ชุดกิจกรรมวิทยาศาสตร์เรื่องการตรวจสอบสารเคมีปนเปื้อนในอาหาร 2) แบบตรวจสอบความสอดคล้องระหว่างจุดประสงค์การเรียนรู้กับเนื้อหาของชุดกิจกรรมวิทยาศาสตร์เรื่องการตรวจสอบสารเคมีปนเปื้อนในอาหาร โดยผู้เชี่ยวชาญ 3) แบบประเมินคุณภาพของชุดกิจกรรมวิทยาศาสตร์เรื่องการตรวจสอบสารเคมีปนเปื้อนในอาหาร โดยผู้เชี่ยวชาญ 4) แบบทดสอบท้ายกิจกรรม 5) แบบทดสอบวัดผลสัมฤทธิ์ทางการเรียนเรื่องการตรวจสอบสารเคมีปนเปื้อนในอาหาร 6) แบบตรวจสอบความสอดคล้องระหว่างข้อคำถามกับจุดประสงค์เชิงพฤติกรรมของแบบทดสอบโดยผู้เชี่ยวชาญและ 7) แบบวัดความพึงพอใจของนักเรียนที่มีต่อชุดกิจกรรมวิทยาศาสตร์เรื่องการตรวจสอบสารเคมีปนเปื้อนในอาหาร ผลการวิจัยพบว่า 1) คุณภาพของชุดกิจกรรมวิทยาศาสตร์เรื่องการตรวจสอบสารเคมีปนเปื้อนในอาหาร โดยผู้เชี่ยวชาญ มีคุณภาพอยู่ในระดับมาก ( X̄ = 4.33, S.D.= 0.69) 2) ประสิทธิภาพของชุดกิจกรรมวิทยาศาสตร์เรื่องการตรวจสอบสารเคมีปนเปื้อนในอาหารมีประสิทธิภาพ (E1/ E2) เท่ากับ 83.85/91.57 ซึ่งเป็นไปตามเกณฑ์ 75/75 และ 3) ความพึงพอใจของนักเรียนที่มีต่อชุดกิจกรรมวิทยาศาสตร์เรื่องการตรวจสอบสารเคมีปนเปื้อนในอาหารอยู่ในระดับความพึงพอใจมากที่สุด ( X̄ = 4.82, S.D.= 0.40)          The purposes of this study were: 1) to develop the science activity packages on food contaminant testing for the 8th grade students, 2) to assess the quality of the science activity packages on food contaminant testing for the 8th grade students by the experts, 3) to study educational efficiency of the science activity packages on food contaminant testing for the 8th grade students, and 4) to study satisfaction of sample group toward the science activity packages on food contaminant testing for the 8th grade students. The sample group of this study was the 8th grade students (35 students) of Prakhonchaipittayakhom School Burirum province which selected by easing simple random sampling. The contents of science activity packages were divided into two activities: 1) How do we test the chemical contaminant, and 2) How do we eat for safety from food contaminants. The research tools consisted of: 1) The science activity packages on food contaminant testing, 2) The assessment form for consistency between the learning objective and the contents of the science activity packages by the experts ,3) The assessment form of the quality of the science activity packages by the experts, 4) The post-activity achievement test, 5) The achievement test on food contaminant testing, 6) The assessment form for consistency of the tests by experts and 7) The students’ satisfaction questionnaire toward the science activity packages. The result indicated that: 1) The quality of the science activity packages by the experts was at level of good quality ( X̄ = 4.33, S.D.= 0.69), 2) The educational efficiency of the science activity packages for the 8th grade students was effective (E1/ E2 ) of 83.85/91.57 which was higher than the 75/75 criteria and 3) The students’ satisfaction toward the science activity packages was at  very good level of satisfaction ( X̄ = 4.82,S.D.= 0.40 ).
